Though I don't know how available they can be in America, you might
have a look at the catalogues by Penguin, Everyman, and the World's
Classics from OUP. I'm positive that Penguin publish Bede, Monmouth's
History of the Kings of England, whose bits on Arthur and Merlin are
essential for later national myth-making, and also at least a selection
from Mandeville's travels. The three volumes are thin, they are clearly
legible in their modern adaptations or translations. World's Classics keep
publishing anthologies of medieval or ancient documents, and they would
really be worth trying.
